My mom and I created this recipe a few years ago and it has been the hit of every social event either of us have brought it to since. Dressed like a no-bake cookie, this simple snack/dessert packs a nutritional punch that will delight your taste buds.
SNITCHAROOS
2/3 cup nut butter (peanut, almond, cashew, sunflower seed)
1/3 cup honey
Splash of milk
Pinch of salt
1 ¼ cup oats
1 cup flakey cereal (low-sugar granola, brown rice krispies, Uncle Sam’s)
2/3 cup chopped nuts (almonds, peanuts, cashews, walnuts)
1/4 cup flax seed or flax seed meal
2/3 cup chocolate chips and/or dried fruit (raisins, cranberries)
In a large bowl, mix the nut butter(s), honey, milk and salt until smooth. Pour in the oats and cereal and mix until coated. Add the nuts, chocolate chips and/or dried fruit. Eat either loose or form into 1 inch balls. Can be frozen for longer storage (if it lasts that long…).
